I've read about him on this website https://gerontology.fandom.com/wiki/Jose_Flores_Flores and there's some links at the bottom that lead to Facebook website with a couple stories about him. Would it be possible to contact his family asking for papers or other documents to help verify his case?

You cannot validate someone if they are not the age claimed, but you can debunk their claim. Now Mr. Flores is neither validated nor debunked yet, but the chances of him actually being 114 (almost 115) are astronomically low. Based on some biographical information I have seen, I would estimate he is more likely 90-100.
